1999 National Beef Tenderness Survey

This study was conducted to:
  • determine the tenderness of beef from the retail case based on Warner-Bratzler shear force and consumer evaluation panels;
  • determine the tenderness of beef from the foodservice industry based on Warner-Bratzler shear force and consumer evaluation panels; and
  • compare results of the 1990 survey with those of the 1999 survey.
